An authentic choripán: a grilled Argentine chorizo placed between two slices of freshly baked bread and generously topped with chimichurri and salsa criolla.


Argentine chorizo is a type of sausage, typically made with pork, although it can also be a blend of beef and pork. Seasoned with generous amounts of pimentón (paprika grown in the high valleys of the Andes), fresh garlic, and a touch of wine, it is remarkably juicy and flavorful.

This simple tomato and onion sauce is similar to a fresh relish, and it adds sweetness and flavor to sandwiches. Although most commonly used as an accompaniment for other grilled meats, it is also frequently added to *choripán*. Many versions of this sauce include diced red and green peppers; you can add them to taste. The mixture combines tomatoes, onions, lemon juice, vinegar, olive oil, salt, and pepper.

Chimichurri is a versatile, liquid sauce originating in Argentina, made primarily with parsley, garlic, oregano, crushed red pepper, vinegar, and oil. It is the classic and inseparable accompaniment to grilled meats and *choripanes*, imparting a fresh, herbaceous, and slightly spicy flavor.
